Will I ever get to try it?

Those of you who have a minor addiction to Facebook like I have may already have come across this recipe; a ‘friend’ posted it to my news feed a few months ago.

I was scrolling through all the things my friends and family had posted when I saw this yummy looking cake, it was a pineapple cake. Well it looked and sounded delicious so I saved the recipe by sharing it so it would go to my home page. Our CEOS club was due to host the bi-monthly county council so I planned to make the cake for that occasion so I would not have a whole cake to eat by myself. My husband isn’t a big cake eater.

As it happened a couple of weeks before the meeting I needed something for another organization. I made them a pineapple cake. It was a big hit and they requested another for an occasion the next week. I made another one. As it happened I attended neither of these events so I still hadn’t tasted it. Score 2/0. I picked up my cake pan in time to bake yet another pineapple cake for the CEOS meeting and this time I would be attending.

Finally I was able to try the delicious pineapple cake and in my opinion, it lived up to the anticipation I had worked up for it. Maybe you would like to try it too.

Pineapple Cake

1 yellow cake mix

4 eggs

½ cup oil

1 can crushed pineapple with juice

Mix the ingredients and pour into a 9 x 13 pan that has been sprayed with a nonstick

spray.

Bake at 350 degrees until toothpick comes out clean. Go by times on cake mix box

Pineapple Icing

1 can crushed pineapple with juice

3 oz. instant vanilla pudding (1)

1 container (8 oz.) Cool Whip

Mix the dry pudding into the Cool whip then stir in the can of pineapple with juice.

Spread over cooled cake.

Enjoy! Keep refrigerated, if any is left.
